Banana Oatmeal Cookies

 
 
Ingredients:

1 1/2 cups flour

3 cups oats

1 1/2 tsps cinnamon

1/4 tsps nutmeg

1 tsp baking soda

1 tsps salt

1 cup unsalted butter, room temperature

1 cup sugar

3/4 cup brown sugar, packed

1 egg

1 cup mashed bananas

1 teaspoon vanilla
Directions:

Preheat oven to 350 and line two baking sheets with parchment paper.

Whisk together flour, oats, cinnamon, nutmeg, baking soda and salt. Set aside.

Mix together butter, sugar and brown sugar until light and fluffy, add egg, mashed bananas and vanilla extract.

Add flour and oats mixture and mix until well combined.

Scoop balls of dough onto baking sheet, spacing 2" apart.

Bake for 14-17 minutes until golden brown and switching pans from top to bottom and front to back midway through.

Cool on baking sheet for a few minutes and transfer to a wire rack to cool completely.
