Easy Apple Hand Pies

 
 
Ingredients:

For the Apple Hand Pies

5 medium apples, peeled and diced (I use Pink Lady Apples)

1/4 cup brown sugar, firmly packed

1/4 cup white sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

2 tablespoons cornstarch

1 tablespoon butter, melted

one package of Puff Pastry

For the Egg Wash

1 egg

1 teaspoon whipping cream

For the Cream Cheese Glaze

1/4 cup cream cheese, room temperature

2 tablespoons butter, room temperature

1/2 cup icing sugar

1/2 teaspoon vanilla

To make this a quick and easy recipe, use store bought puff pastry sheets.

Preheat your oven to 350, then line a baking sheet with parchment paper.

Mix apples, sugars, cinnamon, nutmeg and cornstarch until apples are coated.

Add melted butter.

Cut puff pastry sheet into 4 squares.

Spoon apple filling onto half of a square (about 1/4 cup).

Do not let the apples touch the sides of the puff pastry.

Fold the pastry diagonally over the apples, pressing the edges with a fork to seal.

For the Egg Wash

Beat eggs together with a fork.

Brush each apple hand pie with egg wash and sprinkle evenly with sugar.

Cut a small slit on top of each hand pie.

Bake for 14 to 18 minutes, until golden brown.

Allow hand pies to cool before drizzling with a cream cheese glaze.

For the Cream Cheese Glaze

Using a hand mixer on medium speed, beat cream cheese until smooth.

Slowly add powdered sugar and butter, one tablespoon at a time, to achieve desired consistency.

(Use less butter if you prefer a thicker glaze for this recipe.)

Drizzl frosting on the hand pies and serve. Enjoy!
