Potato Pan Pizza

 
 
Ingredients:

1 cup plain non fat greek yogurt

1 cup self raising flour

1.5 tsp olive oil

2 small potatoes

1/4 cup ranch dressing

1 cup reduced fat cheese, shredded

5 slices bacon cooked and crumbled

1/4 cup red or green onion, diced
Directions:

Boil potatoes for 12 miutes, so they are semi soft and easy to cut, not too soft or they will break.

Then drain potatoes and set aside to cool.

Wonce cooled cut potatoes into thin slices.

Preheat oven your to 475,then lightly brush a 12" skillet with olive oil.

Combine flour and yogurt to make 2 ingredinet dough.

If it's sticky add a little extra flour.

Use flour on your surface and rolling pin.

Roll dough so it is big enough to fit your skillet, then lay it into it.

Make sure dough comes up the sides to form a crust.

Lightly brush a little more olive oil on top of the dough.

Spread ranch dressing onto the bottom of the dough.

Then lay potato slices to cover the bottom.

Sprinkle cheese, crumbled cooked bacon and onion on top.

Bake for 15 to 18 minutes or until the crust is golden brown.

Cut into 4 slices. Enjoy!
