Veggie Burgers

Ingredients:
1 can black beans or red kidney beans, rinsed and drained
1 cup grated carrot (about 1 carrot)
1 cup grated beet (about 1 medium beet)
2 tablespoons chia seeds
1/2 cup crunchy peanut butter
1 teaspoon ground cumin
1 teaspoon paprika
1/2 cup parsley
Sea salt and pepper
2 tablespoons avocado oil
4 burger buns
4 lettuce leaves
Sliced cheddar cheese
2 tomatoes, sliced
1/3 cup mayonnaise or relish
4 large dill pickles

Directions:
Mash the beans in a large bowl.
Mix together carrot, beet, chia seeds, peanut butter, cumin, paprika, parsley, salt and pepper.
Divide into 4 equal portions, then shape into patties.
Heat a large non-stick skillet over medium-high heat.
Add oil and patties then cook 5 minutes on each side.
Assemble the burgers on buns with lettuce, veggie patties, cheddar, tomato and mayonnaise.
Serve with pickles on the side.
