Coca Cola Pot Roast

 
 
Ingredients:

one 4 Lb. chuck roast

1 tablespoon vegetable oil

1 medium onion, quartered

4 carrots, cut into 1" pieces

4 ribs celery, cut into 1" pieces

1 bulb garlic, sliced in half crosswise

1 1/2 pounds small potatoes

1 package Lipton's onion soup mix

1 can cream of mushroom soup

2 cups beef broth

1 can Coca Cola

1 bay leaf

Salt and pepper
Directions:

Sprinkle salt and pepperon all sides of meat, then let sit at room temperature for a 30 minutes before searing.

While the meat rests, cut vegetables.

Slice onion, carrots, celery, quarter potatoes and slice garlic bulb crosswise.

Mix onion soup mix, mushroom soup, beef broth and Coca Cola, then set aside.

Bring a large skillet pan up to heat and add oil.

Sear the chuck roast on all sides until it’s a rich, deep brown color.

When the chuck roast browned, remove it from pan and add veggies with a pinch of salt.

Stir until the onions begin to look translucent.

Put vedgies into your crock pot.

Pour a splash of the liquid mixture into the skillet to deglaze the pan and stir to loosen browned bits.

Add chuck roast, veggies, liquid mixture, bay leaf and a pinch of salt to your crock pot.

Set your crock pot on low, cover and cook for 4 to 6 hours.

To Serve your Pot Roast

Remove the pot roast and put onto a platter, then pour remaing liquid mixture into a gravy boat and serve. Enjoy!
