Coconut and Curry Meatballs


1 pound ground beef

2 tablespoons plain Greek yogurt

2 scallions, chopped

1-1/2 teaspoons chili powder

Sea salt and ground pepper

2 tablespoons olive oil

1 onion, chopped

4 garlic cloves, minced or crushed

1" piece of fresh ginger, grated

1 tablespoon curry powder

1/2 teaspoon ground cinnamon

14 oz unsweetened coconut milk

Juice of 1 lemon

1/3 cup cilantro, chopped

Preheat the oven to 450. Use a rimmed baking sheet, with parchment paper.

To make meatballs

In a bowl, put ground beef, yogurt, scallions, 1/2 teaspoon chili powder and a pinch of salt and pepper.

Mix to combine and roll the mixture into 15 to 20 balls, (2 tablespoons each).

Put meatballs on baking sheet and bake until crisp,15 minutes.

Meanwhile, to make sauce

Heat olive oil in a skillet, when oil shimmers, add onion cooking until softened, for 5 minutes.

Add garlic and ginger and cook 5 minutes. Stir in 1 teaspoon chili powder, curry powder and cinnamon and cook 1 minute.

Stir in coconut milk and 1/2 cup water and bring the sauce to a boil.

Cook until sauce thickens,5 minutes. Stir in the lemon juice.

Add meatballs and cook, stir occasionally, until sauce thickens, 5 minutes.

Remove from heat and stir in cilantro. Serve the meatballs with sauce, rice and naan.
