Fig Tarts with Feta and Honey


1 store bought pie crust

3 1/2 oz feta cheese

3 1/2 oz Greek yogurt

1 tbsp honey

1 tsp lemon zest

4 figs, sliced

1 tbsp fresh thyme leaves and flowers

Preheat oven to 350 then grease a large cupcake pan

cut out and press pie crust into the prepared pan and bake 10 minutes

Beat feta, yogurt, honey and lemon zest till smooth

Spoon into the baked pie crust

Bake 15 minutes until golden

Remove from oven and cool on a wire rack

Remove tarts from pan

Add slices of figs and drizzle with honey then top with thyme leaves and flowers
