Taco Pie


1 pound ground beef

1 packet taco seasoning

3 green onions thinly sliced

1/4 cup salsa

1 cup Mexican style cheese - shredded, divided

4 large eggs

2/3 cup heavy cream

1/2 teaspoon sea salt


Preheat oven to 350. Prepare a 9" pie pan, spray with coconut oil.

Heat a large pan over medium high heat.

When it is hot, add ground beef, cook, stirring occasionally to break it up, until it is browned.

Drain beef and stir in taco seasoning. Set aside while continuing with the next step.

In a bowl, whisk together eggs and cream, then stir in green onions, salsa, 3/4 cup of cheese and salt.

Stir cooked meat into the egg mixture.

Pour this mixture into the pie pan.

Sprinkle remaining cheese on top.

Bake in preheated oven for 35-45 minutes.

Cool for 5 minutes before serving.

Serve with your favorite taco toppings.
