Mac ~n~ Cheese with Bacon and Arugula

Here is a good way to serve a vegetable to kids!
Ingredients:
1 lb pasta of your choice
12 ozs bacon, chopped
1 sweet onion, chopped
2 tablespoons flour
One 14 oz can, fire roasted tomatoes
2 cups milk
3 cups shredded cheddar cheese
3 cups arugula

Directions:
Cook the pasta according to package instructions, then drain.
Fry bacon until golden and crisp, 5 to 6 minutes.
Remove bacon and add onion to pan then cook 4 to 5 minutes.
Add flour and cook 2 minutes more.
Add the fire roasted tomatoes and milk, then whisk until it comes to a simmer.
Add cheddar cheese to the pan and stir until melted.
Add cooked bacon, pasta and arugula.
Stir to coat evenly in the sauce.
Serve immediately and enjoy!
