DIY Poke Bowl

This is an easy, flavorful poke bowl recipe to make at home. Yum!
Ingredients
For the Base
1/4 cup Brown rice, or
1/4 cup White rice
For the Fish
(Must be Sushi Grade fish! Choose 2)
1/4 lb Tuna
1/4 lb Yellowtail
1/4 lb Salmon
1/4 lb Crab Meat
Our substitute with Tofu
For the Sauce
1/4 Cup of soy sauce
1 Tablespoon of Sriracha
2 Tablespoons of ponzu
2 Garlic cloves, minced
1 Teaspoon of minced ginger
1 Teaspoon of sesame oil
2 Teaspoons of olive oil
For the Poke Bowls
1 Avocado, cubed
1 cucumber, sliced thin
3 to 4 Radishes, sliced thin
1 Medium Carrot sliced
1/ 4 cup Edamame, divided
Cilantro, for topping
Pickled ginger, sliced thin (optional)
Directions
For the Base
Cook rice per package directions.
Brown rice will take longer than white rice to cook.
For the Fish
Choose your fish and slice it into bite size pieces.
For the Sauce
Mix all of the ingredients and add with fish to a bowl to marinate for 15 minutes.
To Assemble the Poke Bowls
Put half of your cooked rice into two bowls.
Cut the remaining ingredients, then arrange and divide between your bowls.
Add your fish or tofu and top with cilantro. Enjoy!
