Apples and Fennel Creamy Coleslaw


For the Dressing

1 cup Greek yogurt

1/4 cup apple cider vinegar

2 tablespoons maple syrup

1/2 teaspoon salt

1/4 teaspoon pepper

For the Slaw

12 Oz. coleslaw blend or shredded cabbage

1 apple, chopped

1 small fennel bulb, thinly sliced

1 green onion

1/2 cup raisins

1/3 cup toasted almonds

2 tablespoons fennel fronds, chopped

1/2 teaspoon celery seed

For the Dressing

Put ingredients into a medium bowl.

Whisk until smooth.

For the Slaw

Put cabbage, apple, fennel, green onion, raisins, almonds,
fennel fronds and celery seeds in a large bowl.

Add dressing and toss to combine. Enjoy!
