Chocolate and Strawberry Brownies


For the Strawberry Topping

8 Oz. Strawberries chopped
Slice a few and save for topping

½ cup Sugar

¼ cup Water

For the Brownie Batter

8 Oz. Dark chocolate

2 sticks, Unsalted butter, at room temperature

½ cup Sugar

¾ cup Light brown sugar

3 Eggs Large

¾ cup Flour

⅛ tsp Salt

1 tsp Vanilla

Preheat oven 350, then grease and line an 9" x 9" pan with parchment paper.

For the Strawberry Topping

Place strawberries, sugar and water in a pan on medium heat.

Bring to boil - until the sugar is dissolved.

Once you have a thick syrup consistency - remove from heat.

Set aside to cool while you make the batter.

For the Brownie Batter

Melt butter and chocolate in the microwave or double boiler.

Add sugars and salt to chocolate and butter.

Add eggs, one at a time, making sure each is well incorporated.

Add in vanilla and flour and mix well.

Pour batter into the prepared baking pan.

Spread evenly into all corners.

Spoon strawberry syrup on top of the batter.

Place on the center rack in the oven.

Bake for 35 to 40 minutes until almost set but still moist.

The top will still be very moist because of the strawberry syrup but will set as it cool.

Allow brownies too cool completely and serve with a strawberry slice on top. Enjoy!
