Kid Approved Easy Egg Bake


1/2 an onion

1/2 pound of zucchini squash

4 slices of bacon

8 eggs

1/2 cup milk

1 cup sharp cheddar cheese, shredded

4 ounces of spinach, chopped

1/2 teaspoon salt

1/4 teaspoon pepper


Shred squash and onion with a cheese grater.

Spray a 9" × 9" baking dish with olive oil and preheat the oven to 375.

Fry the bacon until tender crisp.

Remove bacon from the pan and lay it on paper towels to help absorb extra grease.

Pour bacon grease out of the pan and return it to the stove.

Add squash and onion then cook over medium high heat until any liquid has cooked off.

While the veggies are cooking, break eggs into a bowl, add milk, salt and pepper then beat to combine.

Wash and chop spinach.

Put vegetables in the bottom of the prepared dish, then sprinkle in spinach.

Crumble the bacon and add with the cheese over the top.

Pour egg mixture over everything in the dish.

Bake for 25 to 30 minutes until the center of the dish is set and no longer jiggles.

Let the dish cool for 3 to 5 minutes before serving. Enjoy!
