Miso Salmon

Servings: 4
Marinate Salmon for 1 hour for maximum flavor. Yum!
Ingredients:
1 1/2 lbs. salmon cut into (4) 6 ounces filets
2 tablespoons white miso paste
2 tablespoons mirin or white wine
2 tablespoons maple syrup or
1 tablespoon reduced-sodium soy sauce
1 teaspoon toasted sesame oil
1/8 teaspoon pepper
Toasted sesame seeds and scallions.
Directions:
Whisk miso paste, mirin, maple syrup, soy sauce, sesame oil, and black pepper until mixed.
Put salmon in a zip-top bag, add marinade, and coat well, then marinate for 1 hour at room temperature.
Preheat the broiler, then put salmon on a foil-lined rimmed baking sheet
(be sure to use foil because parchment paper will burn under the broiler).
Broil about 6" to 8" below the broiler for about 5 minutes up to 1/2" thick,
or 8 to 10 minutes for up to 1" thick, until caramelized and the fat has rendered.
All ovens vary, keep an eye on the salmon because the marinade can burn easily.
If the salmon begins to burn, place it on the middle rack of the oven away from the broiler.
While the Salmon cooks, heat sesame seeds on low heat until golden and fragrant, for 3 to 5 minutes.
Serve Salmon with toasted sesame seeds and scallions. Enjoy!
