Sweet Potato and Sausage Casserole


Olive oil spray oil

2 medium sweet potatoes, cubed

1 bell pepper, diced

1 medium onion, chopped

1 Lb. ground sausage

8 eggs

1/3 cup milk

1 tsp thyme 1 tsp salt

1/2 tsp pepper

one bunch Green onions, diced

Preheat oven to 375, then spray a 9" x 13" casserole dish with olive oil.

Heat oil in a fry pan over medium high heat.

Add sweet potatoes and cover with a lid.

Cook for 8 minutes, stirring occasionally until the sweet potatoes are almost soft.

Add onion and bell pepper, season with salt and pepper, then cook 3 more minutes.

Put the vegetables into a casserole dish.

Add sausage to the skillet and cook over medium-high heat until browned, 5 minutes, crumbling the sausage as it cooks.

Add sasuage to the casserole dish.

In a medium bowl, whisk eggs, milk and spices.

Pour into the casserole dish and stir.

Bake the casserole covered with an aluminum foil for 20 minutes.

Then remove the aluminum foil and bake for an additional 15 minutes until the top of the potatoes begins to brown.

Remove and let the casserole rest for 5 minutes.

Sprinkle with green onions and serve. Enjoy!
