Asparagus Mushroom Tofu Stir-fry


1 Tablespoon of olive oil

½ teaspoon of sesame oil

3 garlic cloves, minced

1 teaspoon ginger, minced

½ teaspoon of red pepper flakes, (optional)

2 green onions, sliced

1 shallot thinly, sliced

1 cup of asparagus, chopped

1 cup of mushrooms, sliced

one 14 Oz. package of extra firm tofu, drained, pressed and cubed

1 Tablespoon of soy sauce

Rice, for serving (optional)

We used Whole Grain Brown Rice with Quinoa by Lundberg Wild Gourmet, it is a tasty addition to savory and exciting meals.

In a fry pan, on high heat, warm oils.

Add garlic, ginger and pepper flakes and stir-fry for 1 minute.

Add onions, shallots, asparagus and mushrooms and stir-fry for 2 minutes.

Add tofu and soy sauce, then stir-fry for 3 minutes until tofu is golden.

Optionally, serve over Wild Rice and Quinoa. Enjoy!
