Banana Oatmeal Cookies



1 1/2 cups flour

3 cups oats

1 1/2 tsps cinnamon

1/4 tsps nutmeg

1 tsp baking soda

1 tsps salt

1 cup unsalted butter, room temperature

1 cup brown sugar

1 egg

1 cup mashed bananas

1/2 teaspoon vanilla

1/2 cup pecans, crushed


Preheat your oven to 350 and line two baking sheets with parchment paper.

Put peacans into a ziplock bag and roll over with a rolling pin to crush.

Whisk together flour, oats, cinnamon, nutmeg, baking soda, crushed pecans and salt. Set aside.
With a mmixed beat together butter, sugar and brown sugar for 2 minutes, until light and fluffy.

Add egg, mashed bananas and vanilla extract, then mix to combine.

Add flour and oats mixture and mix with a wooden spoon until well combined.

Scoop balls of dough and drop onto paper lined baking sheet, spacing 2" apart.

Bake for 14 - 17 minutes until golden brown and switching pans from top to bottom and front to back midway through.

Cool on baking sheet for a 5 minutes and transfer to a wire rack to cool completely. Enjoy!
