Butter Pecan Cookies

 
 
Ingredients:

1 1/2 cups chopped pecans, toasted

2 1/2 cups all - purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/8 teaspoon nutmeg

1 cup unsalted butter, at room temperature

1 cup granulated sugar

1/2 cup brown sugar

2 large eggs, at room temperature

1 tablespoon vanilla
Directions:

Preheat the oven to 350.

Beat butter for 1 to 2 minutes on medium-high, until light and creamy.

Add sugars and beat for 2 to 3 minutes.

Add eggs, one at a time, with the mixer on low, then add vanilla.

In another bowl, whisk together flour, baking soda, nutmeg and salt.

Add flour, baking soda and salt.

Mix on medium low until just combined.

Stir in toasted pecans by hand and save about 1/2 cup for sprinkling on cookie tops.

Drop 1 tablespoon of dough onto cookie sheet.

Add a pecan pieces on top of each cookie.

Bake for 9 to 11 minutes, or until cookies are set.

They will be puffy and should not look wet.

Cool on the pan for 5 minutes, then place on plates and enjoy!
