Butter Pecan Cookies


1 1/2 cups chopped pecans

2 1/2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, room temperature

1 cup sugar

1/2 cup brown sugar

2 eggs, room temperature

1 tablespoon vanilla

Preheat the oven to 350.

Beat butter for 1-2 minutes on medium.

Add sugars and beat 2-3 minutes.

Add eggs, one at a time, mix on low, then add vanilla.

In a bowl, whisk together flour, baking soda and salt.

Mix dry and wet ingredients on medium-low until just combined.

Stir in pecans by hand. Reserve about 1/2 cup for topping.

Drop 1 tablespoon of dough on a cookie sheet.

Add a few pecan pieces on top of each cookie.

Bake for 9-11 minutes, or until cookies are set, they will be puffy.
