Butterscotch Banana Bread




3 ripe bananas, mashed

1 egg

1/2 cup vegetable oil

3/4 cup sugar

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon baking powder

2 cups flour

1 cup butterscotch chips, divided

1/2 cup pecans, toasted and chopped


Preheat your oven to 350, then grease and flour a 9" x 5" loaf pan or 3 to 4 mini loaf pans.

In a bowl, combine mashed bananas, eggs, oil and sugar.

Stir in cinnamon, nutmeg, salt, baking soda and baking powder, then mix well.

Stir in flour until just combined, then fold in butterscotch chips and chopped pecans.

Pour batter into the prepared pan or pans.

Bake for about 55 minutes for one large loaf, or about 40 minutes for mini loaves.

Or until the bread is golden brown and a toothpick inserted in the center comes out clean.

Let cool in the pan for 10 minutes before turning onto a wire rack to cool completely. Enjoy!
