Carrot Cake Energy Bites

You will love to snack on vegan and nut-free carrot energy bites. Yum!
1 cup raw sunflower seeds (hulled)
1 cup unsweetened shredded coconut + ⅓ cup for rolling
½ teaspoon cinnamon
½ teaspoon fine sea salt
12 soft Medjool dates (pitted and soaked if dry)
⅔ cup carrots, chopped
2 teaspoons maple syrup, to taste
In a processor, combine sunflower seeds, coconut, cinnamon, and salt, then pulse to a fine meal.
Add dates and carrots, then pulse until combined and sticks together.
Taste and add more maple syrup if needed.
If too dry, add more maple syrup; if too moist, add more coconut or chill for 20 minutes to firm up.
Use a tablespoon to scoop the mixture, then roll into 1" balls.
Roll in coconut to coat outside.
Store in refrigerator in an air-tight container for up to 5 days. Enjoy!
