Cherry Muffins with Dark Chocolate



2 cups fresh cherries, pitted

2 tbsp brown sugar

1/2 cup butter, at room temperature

1 cup sugar

2 whole eggs

1 1/2 tsp vanilla

2 cups flour

2 tsp baking powder

1/2 cup milk

1 3.5oz bar dark chocolate, chopped into chunks


Preheat the oven to 375.

Line a muffin pan with paper liners and set aside.

Combine cherries with brown sugar in a small pan and simmer for 5 to 7 minutes.

Let cool while you make the batter.

Beat butter with sugar until light and creamy.

Add eggs one at a time scraping down bowl after each one, then add vanilla.

In a bowl whisk together flour and baking powder.

Gradually add some flour and milk alternately until all have been added.

Scrape down the bowl and mix on low until smooth.

Fold cherries into the batter with the chocolate chunks.

Divide batter evenly between the 12 muffin liners.

Bake for 30 to 35 minutes or until golden brown and the muffins spring back when gently pushed. Enjoy!
