Chicken Sandwich


2 Chicken breasts skinless, boneless about 1 pound.

Sea salt



1 cup Pickle juice

1 Egg

1/2 Cup Milk

1 Cup Flour

1 Tablespoon powdered sugar

1 teaspoon Paprika

1/4 teaspoon Baking Soda

1/4 teaspoon Ground Mustard

1/8 teaspoon Cayenne Pepper, optional

Olive Oil spray

4 Hamburger Buns



Sliced Cheese, optional.

Cut breasts in half and pound to 1/2" thickness.

Sprinkle chicken with paprika, salt, and pepper.

Place in a Ziploc bag and add pickle juice.

Press out air, seal to close and refrigerate 6 hours.

Preheat oven to 450. Line a baking sheet with parchment paper

Stir together flour, sugar, baking soda, and spices.

Whisk together eggs and milk.

Dunk chicken in egg/milk and dredge in flour mixture.

Place chicken on the baking sheet.

Spray both sides of chicken with olive oil to coat.

Bake 12 minutes, turn chicken and bake 15 minutes more.

Remove from oven, top with cheese and let rest 5 minutes.

Butter hamburger buns and bake 3-4 minutes until toasted.

Put pickles on buns and top with chicken and top with bun.
