Chocolate Peanut Butter Crepes


For the Creaps

1 cup spelt flour

4 tablespoon unsweetened cocoa powder

2 teaspoon baking powder

4 tablespoon Coconut sugar

4 egg white

1 1/3 cup + 2 tablespoons unsweetened almond milk

For the Filling

8 tablespoons any melted nut butter of choice

4 teaspoon Coconut sugar

For the Topping

2 tablespoon unsweetened cocoa powder

4 teaspoon Coconut sugar

8 tablespoons warm water

For the Creaps

Combine Crepe ingredients in a bowl and whisk until batter is smooth and free from lumps. (The batter will be thin).

Pour 2 tablespoons of batter onto the centre of the pan and swirl pan to cover with a a thin crepe.

Cook over medium heat and when creap is golden, flip.

Remove when cooked and repeat with remaining batter.

For the Filling

While crepes are frying, prepare peanut butter mix and chocolate sauce in a separate bowl.

Fill each crepe with filling and fold over.

For the Topping

Drizzle with remaining filling and sauce. Enjoy!
