Coconut Curry with Apples


1/2 yellow onion, chopped

1-2 cloves garlic, minced

1 apple, diced

pinch ginger

dash turmeric

1 tablespoon curry powder

one 13.5 Oz. can light coconut milk

1 tablespoon coconut sugar, or maple syrup

1 Tablespoon shredded coconut (optional)

1 to 2 Tablespoons soy sauce

salt and pepper to taste

Soy Cherreso sausage (optional)

basmati rice and parsley for serving

In a sauce pot over medium heat, saute onion and garlic.

Add water if they start to stick.

When onions become translucent, add apple and heat until softened.

Add spices and mix well.

Add coconut milk, soy sauce, sugar, shredded coconut and vegan sausage if using.

Stir until a boil begins to form and reduce heat to low.

Cover and simmer for 15 to 20 minutes.

Add salt and pepper to taste, stir and serve the curry.

This goes well served with basmati or brown rice. Enjoy!
