Corned Beef Sandwiches


8 slices swiss cheese

8 tbsp. butter, softened

16 slices rye bread

1/2 cup mustard

1/2 cup relish

1 Lb. sliced corned beef

1 cup sauerkraut

Butter one side of 8 slices of rye bread, then set aside.

On 8 of the unbuttered slices, spread some mustard and relish.

Top with swiss cheese.

Add corned beef and sauerkraut.

Top with buttered slice of bread, buttered side up.

Heat a non-stick fry pan over medium heat, then put a sandwich in the pan, butered side down.

Butter the top of the sandwitch.

Cook to toast, 3 minutes per side.

Cook the other sandwitches the same way. Enjoy!
