Creamy Tuscan Tortellini

 

Ingredients:

1 shallot, diced

1.5 cups cherry tomatoes

1/2 cup roasted red peppers

1 tbsp. tomato paste

1 tsp salt

2 tsp. Italian seasoning

1/2 tsp. garlic powder

3/4 cup cream

1/2 cup parmesan

2 cups chopped spinach

2 cups cooked cheese tortellini

optional: 1/2 tsp. red pepper flakes

Directions:

Heat 1 tbsp. olive oil in a large skillet over medium-low heat.

Add shallot and saute for 1 to 2 minutes, until softened.

Toss in tomatoes and cook for 8 to 10 minutes, or until softened.

Add red peppers, tomato paste, spices, and cream and stir until well incorporated.

Add optional red pepper flakes.

Add parmesan, tortellini, and spinach.

Let simmer for a few minutes and sprinkle with more parmesan before serving. Enjoy!
