Crock Pot Salsa Chicken

 

Ingredients:

3 pounds chicken thighs

one 16 Oz Jar of salsa

1/4 teaspoon salt and pepper (optional)

3 scallions, sliced (optional, for topping)

Additional options:

lime wedges, chopped fresh cilantro, shreaded Mexican cheese, sour cream, chopped red onions, tortilla chips and avocado slices.

Directions:

Pat the chicken thighs dry with a paper towel.

Put one layer of chicken thighs in a 3 to 4 quart crockpot and season with salt and pepper.

Pour some salsa over the chicken and layer chicken then salsa, repeting until you have salsa on top.

Cover and cook on low for 6 to 8 hours.

Serve over your favorite rice with sliced sacllions, lime wedges, chopped fresh cilantro, shreaded Mexican cheese, sour cream, chopped red onions, tortilla chips and avocado slices. Enjoy!
