Ice Cream Sandwich Cookies

 
 

Ingredients

12 large soft and chewy cookies
36 scoops vanilla ice cream (or your favorite ice cream)
½ to 1 cup mini chocolate chips, sprinkles, or nuts

Directions 

Place six of the cookies on a cookie sheet.
Place 3 scoops of ice cream on each cookie.
Top the ice cream with the remaining 6 cookies.
Press down gently so that the ice cream comes out the sides just a little bit.
Using a butter knife, smooth out the sides of each sandwich.
Put the cookie sheet in the freezer for 10 to 15 minutes. Place the chocolate chips on a plate.
Take out the cookies and roll the sides in the chocolate chips.
Freeze for another 10 minutes.
Serve immediately or wrap in plastic wrap if storing in the freezer. Enjoy!
