Marsala Meatballs


8 Oz mushrooms, sliced, divided

1 Lb ground chicken

1/3 cup seasoned bread crumbs

1/4 cup grated Parmesan cheese

1 large egg, beaten

3 garlic cloves, minced

2 tablespoons parsley, chopped

plus more for garnish

1 teaspoon Sea salt

Ground pepper

1/2 tablespoon flour

1/2 tablespoon butter

1/4 cup shallots, chopped

1/3 cup sweet Marsala wine

3/4 cup chicken broth

Preheat your oven to 400.

Chop half the mushrooms, then transfer into a bowl.

Add chicken, breadcrumbs, cheese, egg, 1 clove garlic, parsley, 1 teaspoon salt and pepper.

Roll mixture into 20 meatballs, and bake for 15 minutes.

Then remove from oven and cover with foil.

Whisk flour, wine and broth to mix.

Heat a large fry pan then add butter, garlic, shallots, and cook until golden.

Add mushrooms, salt and pinch of pepper, then cook, stirring for 5 minutes.

Add meatballs to pan, pour wine over meatballs,
Cover and cook 10 minutes.

Garnish with parsley.
