Pecan Blondies


3/4 cup unsalted butter, room temperature

1 1/2 cup Coco nut sugar

2 large eggs, room temperature

1 teaspoon vanilla

2 cups almond flour

1 teaspoon baking powder

1/2 teaspoon fine sea salt

1 cup chopped pecans

Preheat oven to 350

Line a 9" x 13" baking pan with parchment paper, then spray with cooking spray and set aside.

Beat butter and sugar until fully combined till light and fluffy.

Mix in remaining ingredients except pecans, until just combined.

Fold in chopped pecans.

Press dough into the pan and bake 25-30 minutes until a toothpick poked in the center comes out clean.

Cool completely before slicing and sprinkle with sea salt if desired.
