Pecan-Crusted Pork Tenderloin

Ingredients:
1 tbsp fresh sage, minced
1 clove garlic, minced
1/4 tsp sea salt
pepper, to taste
5 tsp olive oil, divided
1/4 cup pecans, chopped
1 1/2 lbs pork tenderloin
1 medium onion, sliced
1apple, 1/2" thick slices

Directions:
Preheat oven to 425.
Combine sage, garlic, salt, pepper, 1 tsp olive oil and pecans, then mix well.
Pat pork tenderloin dry and brush with olive oil.
Top with a layer of pecan mixture and set aside.
Heat 2 tsp olive oil in a large iron skillet over medium heat.
Add onion and apples then saute for 5 minutes.
Move apples and onions to the sides of the pan and put pork tenderloin in the center.
Put pan into oven and cook for 20 to 25 minutes.
To serve, cut pork into 12 equal slices then top with apple slices and onions. Enjoy!
