Pecan Crusted Pork Tenderloin

Prep Time: 5 minutes, plus 8 hours for marinate.
Total Time: 8 hours, 40 minutes
Servings: 4

This recipe is well worth the time for the prep and it will impress any dinner. Yum!

Ingredients:

1/4 cup apple cider

One 1lb. pork tenderloin, trimmed
(Do not slice yet)

1/4 cup packed brown sugar

1 tablespoon spicy brown mustard

1/2 teaspoon salt

1/4 teaspoon pepper

2 garlic cloves, minced

2/3 cup chopped pecans

Olive oil cooking spray

Directions:

Combine apple cider and pork in a zip-top plastic bag; seal and marinate in your refrigerator for 8 hours.

Preheat oven to 400, then remove pork from bag and discard cider.

Combine sugar and next 4 ingredients and stir then rub over pork.

Roll unsliced whole pork tenderloin in pecans.

Bake at 400 for 25 minutes or until a meat thermometer registers 160.

Remove from oven and let stand 10 minutes before slicing.

Serve with your favorite green vegetable, rice, and applesauce. Enjoy!
