Pineapple Coconut Bars

 
 
Ingredients:

For the Crust

½ cup butter, melted

½ cup light brown sugar

1 cup flour

For the Filling

2 eggs

1 tablespoon vanilla

1 tablespoon lime juice

1/3 cup light brown sugar

¼ cup flour

¼ teaspoon kosher salt

1 cup pineapple tidbits in juice, drained

1 cup shredded sweetened coconut

For the Topping

1 cup shredded sweetened coconut
Directions:

For the Crust

Preheat your oven to 350.

Mix crust ingredients and press into the bottom of a parchment lined 9" x 9" baking dish.

Or double this recipe and use a 9" × 13" baking dish.

Bake for 12 minutes (or 15 minutes for a doubled recipe).

Remove from oven and cool for 10 minutes while preparing the filling.

For the Filling and Topping

Put pineapple and 1 cup coconut in a bowl.

Add flour, brown sugar and salt, then stir to coat.

In another bolw mix eggs, vanilla and lime then stir into pineapple mixture.

Pour filling over the crust and top with remaining coconut.

Bake for 25 to 27 minutes, or until coconut is golden brown.

Let cool completely before slicing. Enjoy!
