Pizza Casserole

A healthy pizza casserole with no crust, ground beef and zucchini!
Ingredients
1 tablespoon olive oil
1/4 cup onion, thinly sliced or minced
12 Oz ground beef or Italian sausage
2 pounds zucchini trimmed, unpeeled, sliced into 1" slices
1/2 teaspoon garlic powder
1 teaspoon italian seasoning
1 1/2 cup tomato sauce
For topping the casserole
1 cup parmesan cheese, shredded
1 cup mozzarella cheese, shredded
2 Oz. pepperoni slices
1/3 cup black olives, sliced
1/4 cup bell pepper, chopped
1/4 cup mushrooms, sliced
1 tablespoon olive oil

1/2 teaspoon garlic powder
1 teaspoon italian seasoning
1 1/2 cup tomato sauce
For topping the casserole
1 cup parmesan cheese, shredded
1 cup mozzarella cheese, shredded
2 Oz. pepperoni slices
1/3 cup black olives, sliced
1/4 cup bell pepper, chopped
1/4 cup mushrooms, sliced
Directions:
Preheat oven to 400, then grease a 13" x 9" baking dish with olive oil spray and set aside.
Heat olive oil in a large fry pan.
Add onion and cook until fragrant and translucent.
Add Meat - crumble the meat, garlic powder and Italian seasoning, then cook 2 minutes until cooked through.
Stir in zucchini slices (or grated zucchini) and tomato sauce.
Cover and simmer 4 minutes until the sauce forms bubbles on the side of the pan.
To assemble the casserole
Remove from heat and put a layer of zucchini and meat mixture into a baking dish.
Add 1/2 of the shredded cheese and continue layering until pan is full.
Cover with remaining cheese, add pepperoni, olives, mushrooms and bell pepper.
Get creative and add more varieties of cheese or meat.
Bake for 25 minutes, until cheese is melted.
Cool the casserole for 5 minutes before serving. Enjoy!
