Savory Salsa Chicken


3 cups frozen white corn

one 15 Oz. can black beans, drained and rinsed

one 15 Oz. can diced tomatoes with chilis, drained

1 cup salsa, divided

1 teaspoon garlic, crushed

½ teaspoon cumin

2 Lbs. boneless, skinless chicken breasts, sliced

Salt and pepper, to taste

Preheat your oven to 375, then spray a 9" x 13" baking dish with avacado oil.

In the prepared dish, mix together frozen corn, black beans, diced tomatoes, ½ cup of salsa, garlic and cumin.

Put chicken on top, then season chicken with salt and pepper, to taste.

Pour remaining ½ cup of salsa over chicken.

Cover tightly with foil and bake for 45 minutes, or until internal temperature of chicken reaches 165.

The cooking time will vary depending on the size of the chicken breasts.

Remove chicken from dish and slice.

To use this recipe to fill tacos, burritos or quesadillas, shred with two forks.

Return to dish, stir to combine and serve. Enjoy!
