Tex Mex Chicken Bake


2 lbs boneless skinless chicken breast

1 1/4 cup salsa, divided

2 Oz diced green chilies

1 Oz can sliced black olives drained,

1/2 cup pepper jack cheese, grated

1/2 cup cheddar cheese, grated

1/2 avocado, chopped, for garnish

2 tbsp chopped cilantro, for garnish

3 tbsp sour cream, for garnish

Preheat oven to 400, spray oil in a 9" x 13" baking dish.

Pour 1/4 cup salsa in the pan.

Put chicken breasts on top of salsa.

Spoon green chilies over chicken.

Pour remaining salsa on top of chicken.

Sprinkle both cheeses on top of salsa.

Scatter sliced olives on top.

Bake for 30 to 40 minutes

Top with avocado and cilantro.

Add a 1/2 tbsp of sour cream to each serving.
